    1 med onion, chopped
    2 cloves garlic, minced
    1 lb ground turkey
    1 can (14.5 oz) diced tomatoes, no salt added
    1 pkg frozen mixed vegetables
    1 cup finely shredded mozzarella cheese
    3 cups cubed potatoes
    1/2 cup 2% milk


Boil potatoes in water til done. Combine with milk and mash. Set aside. Saute onion and garlic in saucepan. Add ground turkey and cook until meat is browned. Add tomatoes and vegetables and simmer for about 10 minutes. Pour into a 2 qt casserole/oven proof dish. Spread mashed potatoes over this mixture. Place in preheated 350 degree oven for approx. 30 minutes. Remove and sprinkle cheese on top and return to oven. Bake until cheese is golden and bubbly, about 7 minutes.
You can use beef or chicken if you choose. And other cheeses as well. Salt and pepper to taste. This is a very versatile recipe and easy and quick to prepare on those days you just don't feel like cooking a great big meal. Freezes well(without potatoes).
