Ingredients

    6 chicken thighs boneless skinless (approx. 20 oz or 580 g)
    4 tbsp butter (I used salted)
    3 cups whole mushrooms
    5 cloves garlic
    1 tsp crushed chilli pepper
    1/2 cup fresh, chopped parsley or as desired (opt)
    2 Tbsp lemon juice
    1 Vegetable Bouillon cubes, unsalted
    1 cup water

Directions

Clean mushrooms and quarter large ones; leave small ones whole.
Finely chop parsley and garlic.
Prepare one stock cube with 1 c boiling water.
Juice about 1/2 lemon.
Heat a non-stick pan with 2 Tbsp of the butter. When it is a bit foamy and very hot, add the chicken. Cook until browned on each side and safe internal temperature. (10-20 minutes) Remove from pan, leaving fat/ butter.
Add garlic and chilies, stir well, then add mushrooms and remaining butter. Cook till they begin to brown on med-high heat.
Now add the broth (maybe less than 1 c), lemon juice and the chicken. Let sauce reduce and ensure chicken is thoroughly heated (165 degrees); this may take 5 to 10 minutes.
Serve immediately with rice or what you like.
