Introduction

Boiled Omelettes take the fat out of cooking and basically steam the eggs. I have even made this using just 1 egg (or egg beater equiv.) and it fluffs right up for a great, filling meal. Ingredients

    1 tbsp. diced bell pepper
    1 tbsp. diced onion
    2 small raw mushrooms, chopped or sliced
    1 raw broccoli spear, chopped
    2 cauliflower flowerettes, chopped
    1/4 tsp olive oil
    seasoning, to taste
    1/2 cup egg substitute
    1/4 cup reduced fat shredded cheese
    1/4 cup Ore-Ida Frozen Hash Browns
    1 Quart size freezer storage bag



Directions

Heat oil in small non-stick saute pan. Add veggies (top 5 ingredients on list) and cook until done. Let cool. Bring pot of water to boil. Place cheese, hash browns, veggie mixture and egg beaters in freezer storage bag. When water is boiling, place bag in water and set timer. Check after 17 minutes ... if it looks runny, allow to boil for a few more minutes. When finished cooking, open bag (be careful, bag is hot and steam will be released upon opening) and slide out onto plate. Enjoy alone or with salsa.
