Ingredients

    2.5 cup Enchilada Sauce (2-10 oz. Old El Paso Mild)
    1.3 cup Campbell's Cream of Chicken Soup (98% fat free) -1 can
    1 cup Milk, 1%
    8 oz. ground turkey
    8 oz ground beef, lean
    0.25 cup, chopped onions, raw
    16 Tortillas, MISSION, flour tortilla, 8 inch, 49g
    8 oz Pepper Jack Cheese
    8 oz Colby Cheese
    20 jumbo Black Olives

Directions

Brown ground meats, add onions and saute. Add enchilada sauce., COC soup, milk and stir til combined. Simmer about 10 minutes on low heat. Grate cheeses, slice/chop olives. Roll u each tortilla with cheeses and chopped olives (**Feell free to add whatever you want!) , arrange in glass baking dish. When ready to cook, cover enchiladas with meat sauce. Cover the dish and microwave about 6-8 minutes on 60-80% power, depending on size of dish. The yield is pretty flexible depending on how much you add to each tortilla. You can use all beef if you like. Extra sauce freezes well.
