Ingredients

    1 head, large (about 7" dia) Cabbage, fresh, shredded
    2 small (5-1/2" long) Carrots, raw, shredded
    2 tbsp Salt (non iodized)

Directions

Shred the cabbage and carrots. Mix together with the 2 tbsp of salt.

Place into large sealable container (I used a very large jar). Have the container open, and pierce holes in the mix to create air pockets. I used a chopstick to "pierce" the mix a few times.

Let stand, slightly uncovered, for 2 days in cool room temp.
It's ready to eat.

Afterwards, close and put into fridge.

Serving Size: Makes 10-11 cups of sour cabbage

    Looks so easy, but the sodium is verboten` for me. - 6/6/19
