Number of Servings: 8


    * Kroger Instant Whole Grain Brown Rice, 1 cup
    * Kroger Sweet Golden Corn, canned, 1.75 cup
    * Ro-tel Diced Tomatoes w/ Lime Juice & Cilantro, 10 oz (remove)
    * Salsa, .5 cup (remove)
    * Water, 1 cup


Drain corn and tomatoes. Combine all ingredients in microwavable dish. Cover and cook 5 minutes on high. Stir, re-cover, and microwave an additional 3-5 minutes until rice is tender and most of the liquid is absorbed. Let stand uncovered a minute or two before serving. Makes about 8 1/2 cup servings.
