16 oz Boneless Skinless Chicken Breast (uncooked)
1 Can Ro-Tel Original Diced Tomatoes & Green Chilies
1 Medium Onion, Cut into Thin Strips
2 Medium Bell Pepper (1 Red & 1 Green)
2 tbsp Olive Oil
1/2 Pkg. Old El Paso Fajita Seasoning Mix
2 tbsp Chili powder
2 tsp Cumin - ground
1/4 tsp Salt
Squeeze some fresh lime juice over the baked chicken & vegetables for more flavor (after they are done baking)
Top With: Fresh Chopped Cilantro, Sliced Avocado, Light or Fat Free Sour Cream, Shredded Cheddar or Mexican Blend Cheese &
Wrap them in White Corn Tortillas instead of Flour to save on calories!
2.Combine the Chicken, Rotel, Onions & Peppers in a large Gallon Size Freezer bag. Drizzle Oil over Chicken mixture, and add all other seasonings (sprinkling across mix). Seal the bag and toss to coat all pieces evenly.
3. Pour Contents of bag into baking pan. Bake uncovered at 400 F. for 20-25 minutes or until chicken is no longer pink and vegetables are tender.
