Introduction

I can't eat eggs, so tofu is a good substitute for me. I can't eat eggs, so tofu is a good substitute for me.
Number of Servings: 2

Ingredients

    7 oz Tofu, Extra Firm, Nasoya
    .5 tsp Onion powder
    .5 tsp Garlic powder
    1 tsp Turmeric, ground
    1 serving Tomatoes, Roma small (2-2.5" diameter; whole)
    5 grams spice select spicy vegetable broth
    1 tbsp Butter, unsalted

Tips

I like to add a little cheese at the end. The recipe is good on its own or with toast or wrapped up in a burrito


Directions

Press the tofu for as long as you've got time for. Break it up into a bowl and mix it with the spices and chopped tomato. Put the butter in a nonstick pan and when it has melted add the tofu. Mix it around to dry it a little, then add the broth a little at a time, letting it boil off in between each addition. I ended up using a few tablespoons of it.
