Ingredients

8 corn tortillas
2 cups refried beans divided
1/2 cup water
2.5 cups shredded Iceberg Lettuce
4 oz grated Monterey Jack cheese
Directions
Add water to 1/2 cup beans in small skillet, heat
Heat remaining beans in microwave and set aside
Submerge tortillas one at a time in hot water/bean mixture until tortilla is very soft and pliable
Spread tortilla out flat on plate and spoon approx 2 tbsp microwaved beans and a pinch of cheese on tortilla then fold in half, then half again to make a triangle.
Stuff as much lettuce into it as you can without tearing it.
Serve four on one plate
Top with a little lettuce and rest of cheese
