Ingredients

    2 sweetpotato, 5" long Sweet potato
    2 medium (2-1/2" dia) Onions, raw
    1 cup Chickpeas (garbanzo beans)
    1 cup Coconut Milk (Silk)
    .5 cup Canned Tomatoes
    1 tbsp Caribbean Jerk Season (by AINTSKEERD)
    1 serving (OXO) Vegetable Stock Cube (by AUTUMNBIRCH)
    1 cup (8 fl oz) Water, tap
    .5 tbsp Rapeseed Oil tblsp (by MIKAZZA2)

Tips

Adjust heat and seasoning as desired


Directions

1. Peel and cube sweet potato and onion. Add the oil to a pot and gently cook off the onion until soft.
2. Add in the sweet potato, chickpeas, coconut milk, canned tomatoes, jerk seasoning, vegetable stock, and water. Bring to a boil, reduce heat, cover and simmer until the sweet potatoes are cooked.
3. Uncover and simmer until the liquid thickens.

Serve over rice
