This is a substantially lower calorie version of a delicious summer standby. This is a substantially lower calorie version of a delicious summer standby.
Number of Servings: 8


    5 cups raw potatoes
    1 stalk celery, chopped
    2 radishes, thinly sliced
    3 small scallions (or 2 large), minced
    4 hard-boiled eggs, chopped
    1/2 cup fat-free Miracle Whip
    1/2 cup low-fat sour cream
    1 tbs cider vinegar
    1 tsp yellow mustard
    2-3 sprigs parsley, minced (optional)
    1 leaf basil, minced (optional)
    salt and pepper, to taste


Boil potatoes until tender but firm and soak in cold water.
After potatoes are cool, cut into bite sized chunks and put in a large mixing bowl
Add the celery and radish
In a large measuring cup combine vinegar, Miracle Whip, sour cream, mustard, scallions, parsley, basil and mix well
Add salt and pepper to taste
Stir the dressing into the potato mixture, stirring carefully so as not to break all the potatoes
Add the hard boiled eggs and mix carefully again.
You can set aside one of the eggs and slice it for a garnish to go on top of the salad.
Transfer mixture to a serving bowl and sprinkle with paprika.
Chill well before serving.
Makes about 8 3/4 cup servings.
