Ingredients

    2 cans chicken broth, 98% fat free
    1/3 cup onion, diced
    1/2 cup carrots, diced
    2 stalks celery, diced
    1 clove garlic, minced
    1 Turkey sausage ring sliced
    2 cups brown rice
    1 can black eyed peas, drained and rinsed

Directions

1. in dutch oven, combine chicken broth, onion, celery, carrots, garlic, and sausage, bring to a boil. Reduce heat and simmer with cover on for 45-60 minutes.
2. Add peas and rice 15-20 minutes before serving.
