Introduction

Ingredients

    2 cup long grain white rice, cooked
    2 chicken breast, cooked and diced
    2 eggs, lightly beaten
    1/4 cup carrots, chopped
    1 stalk celery, diced
    1/2 cup frozen green peas
    1/2 cup frozen corn kernels
    2 Tbs. Reduced Fat Soy Sauce
    Water as needed

Directions

1. Over medium-high heat, scramble egg using non-stick skillet and cooking spray.
2. Remove from pan, add carrots, celery and onion to skillet, stir fry over high heat adding water as needed until tender crisp.
3. Add eggs, peas, chicken and corn to pan, stir and mix well.
4. Add rice and soy sauce, mix to combine.

    Incredible!
    My husband and I absolutely loved this recipe. The only thing I noticed was in the instructions it says add onions but in the ingredients there was no onions. I just added 1 onion. I also threw in some garlic powder like they do at Benihanas and it was fabulous. - 1/28/09

    Very Good
    The kids loved this. I forgot to add the eggs, and used Mrs. Dash instead of soy sauce because my daughter is allergic to soy... but, other than that, this was just like the C&R my mom used to make. It really hit the spot! - 9/23/08

    I love this. Not alot of salt which helps me. I did modify a little but it was great. - 8/12/08
