    Plantains, 1 cup slices
    Scallions, raw, 1 medium (4-1/8" long)
    Peppers, sweet, red, raw, sliced, .5 cup
    Red Ripe Tomatoes, .5 cup, chopped or sliced
    Mozzarella Cheese, part skim milk, 2 oz


Brown plantain slices in oil 'til browned. Chop all vegetables and toss together with cheese. Layer plantains in pie plate, top with vegie/cheese mixture. (slices of tomato can be layered between cheese mixture).
Broil til browned on top. 5 mins.
