    2 cups fat free Cottage Cheese
    8 egg whites or egg white substitute equivalent to 4 eggs
    1/2 c whole wheat or oat or light rye flour (or use 1/4 cup flour and 1/4 cup ground up Fiber One or All Bran cereal for high fiber pancakes)


Whip cottage cheese with beater until fluffy (optional first step).
Mix cottage cheese,egg whites & flour in a small bowl. Let rest for an hour or overnight in the fridge.
Heat nonstick griddle
Spoon batter on griddle and fry until bubbles on the surface of the pancake remain open. When bottom side is a nice golden brown flip till other side is the same color.
Finish pancakes on a plate with a little Stevia and add sliced fruit of your choice.
