Ingredients

    1.0 tbsp Canola Oil
    2 pepper, large (3-3/4" long, 3" dia) Yellow Peppers (bell peppers)
    1 large Onions, raw
    16 serving egg whites (for omlet - 1 serving = 1 eggwhite)
    1oz Athenos Reduced Fat Feta Cheese

Directions

Preheat oven to 375F Saute veggies in oil. Whisk egg whites with milk until blended Coat muffin pan with cooking spray Pour egg white mixture in each muffin round about 2/3 full Add a spoonful of veggies, a little cheese and stir slightly Top with parsley or cilantro if desired. Bake for 12-15 minutes, until eggs puff up. Refrigerate for up to 5 days. ( not part of nutrition info but can also add sausage crumbs or sweet potato hash for more fullness)
