Introduction

This was HORRIBLE to try and figure out!!! Everything in Tablespoons instead of cups like I needed. The nutrition information is so totally way off because of the crap I had to enter! Ingredients

    3-4 Bone Less SkinLess Chicken Breasts
    1 cup Apricot Preserves
    2 TBS Dijon Mustard
    1 cup Catalina salad dressing
    1 - 2oz package ONION soup Mix, Dry
    1 cup 'french fried onions'
    1/2 cup canola oil

Tips

Yu can use bottled Catalina dressing or make your own.

Directions

Preheat oven to 375. Grease 9 x 13 casserole dish with cooking spray. Set aside

Whisk Catalina dressing with Dijon mustard in a bowl, add oil, whisking constantly to combine.

whisk in dried onions soup mix.

Add apricot preserves to dressing and whisk again to combine

Place chicken breasts in casserole dish and cover with apricot-Catalina dressing mixture and bake 40 minutes or until chicken is cooked through.

Remove from oven and top with crispy fried onions

Serving Size: 1 serving = 1 chicken breast, whole recipe makes 3-4 servings
