This cheesy corn chowder is delicious on a cold day! This cheesy corn chowder is delicious on a cold day!
Number of Servings: 4


    1 can fat-free chicken broth
    1 cup water
    1 slice low-sodium bacon
    2 carrots, peeled and chopped
    1 medium red potato, chopped with skin on
    2 stalks celery, with leaves on, chopped
    1 small onion, diced
    2 cloves garlic, chopped
    1 can sweet corn, drained
    1 can creamed corn
    1/2 cup nonfat milk
    1/2 cup shredded cheese, any variety
    1 tsp veggie grill seasoning (any variety)
    dash salt


Place one strip of bacon in a cold medium sauce pan, and set to medium heat. Remove bacon when crispy and set aside. Into bacon drippings, place the carrots, potato, celery, onion, and garlic. Cook over medium heat for 5 minutes, stirring occasionally. Add chicken broth, water, and spices. Cover and bring to a boil. Reduce heat and summer for 30 minutes. Add corn and creamed corn. Add milk, cheese, and crumbled bacon. Cook for 5-10 minutes until all flavors are incorporated. Serve hot. Makes 4 hearty servings.
