Ingredients

    1 cup Barley, pearled, raw
    28 grams Scallions, raw
    112 grams Red Ripe Tomatoes
    155 grams Cucumber (with peel)
    .18 cup Ocean Spray Reduced Sugar Craisins - 1/4 cup
    2 tbsp Balsamic Vinegar
    5 grams Basil

Tips

Vary vegetables.
Vary fruit
Vary herbs: thyme and currents, rosemary and grapes or oranges.....
Use red onion.


Directions

Cook Barley, let cool. Rinse thoroughly, drain.
Cut vegetables into bite sized pieces.
Chop basil into fine strips.
Mix together and refrigerate.
