Cheesy Eggplant Cheesy Eggplant

Ingredients

    3 cup, cubes Eggplant, fresh
    .25 cup Tomato Sauce
    3 tbsp Heavy Whipping Cream
    2 serving "Great Value" Pepper Jack Cheese, Sliced (1 slice)
    2 tbsp Butter, salted

Directions

Saute eggplant with butter, then add all other ingredients, let simmer for 10mins
