Number of Servings: 3


    1.5 tsp Canola Oil
    2 cloves Garlic, peeled and sliced
    2 c (estimate 12) Green Onion, sliced
    1 cup Potato, peeled and diced
    3 c Campbells vegetable broth no salt (or water)
    1 wedge Lemon
    Salt and Pepper to taste


Heat oil in a medium pot, med heat, then add garlic.
Stir and cook till starting to brown.
Add green onions and cook about 1 minute.
Add potatoes then pour broth or water over and bring to a boil.
Turn down and simmer until potatoes are soft.
Season as desired.
Cool slightly then blend. Return to heat to serve nice and hot, OR chill.
Squeeze lemon wedge over and stir in just before serving.

Serving Size: makes about 3 generous 1-c servings
