Ingredients

    1 cup beans, either canned or precooked
    2 cups sifted flour
    1 cup granulated sugar
    1 - 1/2 teaspoon baking powder
    1 t. salt
    1 t. cinnamon
    1/2 t. cloves
    1/2 t. nutmeg
    1/2 c. buter
    3/4 c. milk
    1 t. molasses
    2 eggs
    1/4 c. milk
    1 t vanilla

Directions

Line cupcake pans with paper liners. Mash the lentils till smooth. Sift fry ingredients. Add butter, 3/4 c. milk, molasses & beat about 2 minutes. Add eggs, 1/4 c milk, vanilla, and mashed lentils. Beat 2 more minutes. Spoon into cupcake pans. Bake 20 minutes at 400 degrees F.
