Number of Servings: 12


    1 oz. square unsweetened chocolate, melted
    1/2 c. egg white substitute (or 2 egg whites)
    1/2 c. Splenda for baking
    1/4 c. Splenda brown sugar
    1/2 c. Unsweetened applesauce
    1 c. Zucchini, peeled and grated
    1/2 tsp. Vanilla extract
    1 c. All-Purpose white flour
    1/2 tsp. Baking soda
    1/4 tsp. Salt
    1/2 tsp. Cinnamon
    1/4 c. Mini semi-sweet chocolate chips


Preheat oven to 350 degrees. Put muffin papers in a muffin tin, or spray them with non-stick spray.

Microwave chocolate square until melted.

In a large bowl, combine egg whites, Splenda, Splenda brown sugar, applesauce, grated zucchini, vanilla and chocolate. Mix well.

Add flour (you can sift the flour if you prefer, but I don't), baking soda, salt and cinnamon. Mix well. Stir in chocolate chips.

Pour batter evenly into muffin tin and bake for 20 minutes, or until an inserted toothpick comes out clean.

Makes 12 muffins.
