Ingredients

8 oz. boneless, skinless chicken breast
3 c finely shredded romaine lettuce
2 finely chopped red bell peppers
4 tbsp finely shredded basil
2 tbsp pumpkin seeds for garnish
1/3 c craisins for garnish
slice chicken breast into small pieces for saute. add to hot frying pan and cook until done.
while chicken is cooking, shred romaine, chop peppers and basil - add to bowl.
when chicken is done cooking, set aside to cool.
to make dressing, combine peanut butter, soy sauce, honey, rice wine vinegar, and hot sauce in a bowl - whisk until thoroughly blended. pour over salad mixture, toss well. add chicken, pumpkin seeds and craisins - toss well and serve.
this is a great main course salad, for either lunch or dinner - hope you enjoy!
