Introduction

Ingredients

    2 egg whites
    1 whole fresh egg
    1/2 cup of mixed peppers (I dice green, yellow, orange and red peppers together)
    2 or 3 tablespoons of diced onion
    1/2 oz of your favorite low fat cheese (I use a colby/ cheddar mix)
    5 or 6 sliced grape tomatoes

Directions

cook on medium heat!! Very important!
Whisk together egg whites with whole egg, add diced veggies and pour into preheated, greased omelet pan or small sauce pan. *Very Important: cover pan with lid for about 5 minutes
top eggs with cheese (and I add fresh baby spinach) fold omelet over, cover again and cook on medium heat for about 5 minutes

Serve Hot.
I cut this omelet into 3 parts for my kids, as none of them could ever finish a whole one themselves
