Ingredients

    eggplant
    olive oil
    parmesean cheese
    mozarella cheese

Directions

Wash eggplant. Slice eggplant in 1/4-1/2" slices. Place eggplant on a baking sheet lined with aluminum foil. Brush eggplant with olive oil. Broil about 5 minutes. Remove from oven and turn slices over. Brush with olive oil. Top each slice with parmesean cheese and mozarella cheese. Return to oven and broil until cheese is melted.
