Ingredients

    26.8 oz Cucumber (about 4 small cucumbers)
    3 tbsp Scallions, chopped (about 3 medium)
    1 1/2 cups Plain Non-fat Greek Yogurt
    3/4 cup White Balsamic Vinegar
    1/4 tsp Onion powder
    3/4 tsp Garlic powder
    1/4 tsp black Pepper
    1 tbsp Dill, dried

Tips

Normally use either seedless cucumbers or pickling cucumbers that over grew in the garden. If using normal cucumbers may want to de-seed.


Directions

1. Peel alternating stripes down cucumber leaving some of the skin. Cut in half lengthwise and then slice thinly with knife. Alternately, don't cut and slice cucumbers on a mandolin then cut in half. Place cucumbers in a large shallow container or bowl.

2. Chop scallions and add to cucumbers.

3. In a small bowl mix remaining ingredients until well blended and pour over cucumbers.

4. Chill and allow to marinate at least 1 hour before serving - normally several hours if you have the time.
