    145 grams/5.2 oz shredded cheese- any flavor
    4 oz shredded Rotisserie Chicken
    1/4 cup Peppers (any variety), finely chopped
    5 large Eggs
    9 tbsp Egg substitute (to equal 3 eggs)
    6 tbsp (3 oz) Cream Cheese, any flavor, softened
    6 tbsp unsalted butter, melted
    Any combinations of spices: I use a bit of salt, pepper, nutmeg & cayenne.


This is NOT a big serving, so be sure to serve with a salad or other vegetable. If you are not worried about low carb, you could even add a dinner roll.


PREHEAT the oven to 350 degrees

IN a pie pan, spread 3/4 of the cheese

TOP the cheese with the chicken and peppers

IN a large bowl whisk the cream cheese, eggs & egg substitute. When well blended, slowly pour in the melted butter. Add the spices and stir.

POUR the egg mixture over the cheese & chicken. Top with the remaining cheese

BAKE for 30 minutes. Turn off the oven and allow the pie to finish cooking in the hot oven.

CUT & Serve.
