Ingredients

    2 tbsp Extra Virgin Olive Oil
    1 cup, chopped Onions, raw
    2 clove Garlic, minced
    3 tsp Fresh Ginger, minced
    1/2 cup, diced Celery, chopped
    1/2 cup Bell peppers (Green), chopped
    1/2 tsp Cumin (ground)
    1 cup red lentils, dry, uncooked, rinsed
    4 cup chicken broth, unsalted
    1 cup Diced Tomatoes, no salt added
    1/2 tsp Turmeric, ground
    1/3 cup Cilantro, chopped
    1 dash Salt

Tips

For extra flavor, add a dollop of plain Greek yogurt to your bowl when serving.


Directions

Heat oil in a large pot over medium heat. Add onions and cook until softened, about 5 minutes. A pinch of salt can be added while sweating the onions. Toss in the celery and peppers and stir to combine.

Add the garlic, ginger, and cumin to the onion mixture. Stir to prevent sticking while cooking until fragrant, about 2 minutes. Additional oil may be added if the pot becomes dry.

Add the lentils, broth, tomatoes, turmeric, and cilantro. Bring the soup to a boil.

Reduce heat to medium-low, cover, and simmer, stirring often, until lentils are soft, about 20-30 minutes.
