Something different for breakfast. Something different for breakfast.

    1 Red Potato (about 150 grams)
    1 small onion
    2 toes of garlic
    1 lg. egg
    1/4 cup egg beaters cheese & chive
    dash salt
    dash pepper
    1 TB Grated Parmesan Cheese


Dice the red potato into a microwave safe bowl, sprinkle with a few drops of water and a dash of salt. Microwave for 5 minutes.

Diced the onion and garlic while potato is in microwave and set aside.

Wash and cut ip a few spinach leaves and set aside.

Heat 1 TB. Olive oli in fry pan on medium heat. Take potato out of microwave and transfer to fry pan. Brown lightly. When browned to your satisfaction, add the veggies and continue to stir until onions are soft and spinach is wilted.

Scramble the egg and egg beaters together with about 1 TB. parmesan cheese and pour over potato spinace mixture. Stir as needed until cooked through.

Makes 1 large serving or 2 average servings.

  • Hahahaha Never heard a clove of garlic called a toe. How funny is that? I love it!!! I will call it that from now on. I love omelets and plan to try this one sometime. Thanks for posting it. - 7/20/08
