Number of Servings: 6


    1c. sifted all purpose flour
    3/4 c oat bran
    1/2 tsp baking soda
    1 tsp baking powder
    1/4 Cup brown sugar (I used the splenda baking blend - because it was all i had in the house -no calorie savings, but real brown sugar would have been better)
    1 c. buttermilk (low fat)
    1 cup diced peaches (unpeeled becuase i'm lazy)
    1 cup chopped pecans
    1/2 tsp. salt
    3 tbsp. melted butter
    1 egg, well beaten


Preheat oven to 425 degrees.
Combine dry ingredients.
Combine wet ingredients

Mix together
Bake in a hot oven for 20 to 25 minutes.
Makes 12 two inch muffins. (or 6 Mal sized muffins)
This recipe theoritcally makes 12 muffins - but 2 inch muffins are small
