    1 T Extra Virgin Olive oil
    2 Garlic Cloves Minced
    1 Can Fat Free Chicken Broth
    1 1/2 Cups Uncooked Whole Wheat Couscous
    2 Cups Chopped Fresh Tomatoes
    2 Cups Cubed Cooked Chicken (about 2 breasts)
    1/3 Cup Thinly Sliced Basil
    2 T Balsamic Vinegar
    1/2 t Salt
    1/4 t Black Pepper
    1/4 Cup (1 oz.) Crumbled Fat Free Feta Cheese


Combine 1 tablespoon olive oil and garlic in a large microwave-safe bowl, and microwave at high for 45 seconds. Add the broth; microwave at high 4 minutes or until mixture simmers. Gradually stir in couscous; cover and let stand 5 minutes. Fluff with a fork. Stir in the tomato, chicken, basil, vinegar, salt, and pepper. Sprinkle with feta cheese.

Makes 4 1 1/2 cup servings.
