Introduction

Ingredients

2 cans Lemon Pie Filling
40 Pecan Shortbread cookies (2 packages)
8 oz Light Butter (2 sticks)
2 cup shredded unsweetened coconut
0.5 cup Chopped Pecans
Directions
- Place cookies in a large freezer bag. Crush cookies into fine crumbs with a rolling pin.
- Melt butter and add to the crumbs, press into a greased 9 x 13 glass baking dish.
- Bake crust at 350° for 10 minutes, let cool.
- Spread pie filling evenly over the crust.
- Sprinkle coconut and nuts over the top.
- Chill for at least a hour before serving.
Serving Size: makes 24 squares
