Ingredients

    1 cup Jicama, diced
    1 large bell pepper, diced (I like to use red or yellow when possible)
    1 cup cliced grap tomatoes
    1/2 Jalapeno Pepper, finely diced
    0.5 cup yellow corn (if frozen, thaw first.)
    1 C fresh cilantro (or 1 tbs + 1 tsp dried)
    1 tsp Cumin seed
    15 oz can of black beans, drained.
    1 avocado, diced
    1/2 lime

    1/2 tsp of each
    Garlic Powder
    Chilli Powder
    Oregano
    Salt


Tips

This makes a great lunch to bring to work, but it also makes a good side dish, if you change the portion size to 4.

Makes 2 servings of 3.5 cups.


Directions

Add beans, avocados, jicama, bell pepper, tomatoes, jalapeno, corn and cilantro into a large mixing bowl.

Add the seasonings and lime, mix well.

Adjust seasoning to your liking.
