    92.5 grams Organic All-Purpose White Flour
    1 grams Baking Soda
    57.5 grams Butter, salted
    50 grams Granulated Sugar
    40 grams Brown Sugar
    1 grams Salt
    28.34 grams Egg white, fresh
    2.5 grams Vanilla Extract
    112.5 grams Ghirardelli Chocolate Chips 60% Cacao Bittersweet Chocolate (16 chips)


1. Put on an apron and wash your hands.
2. Preheat oven to 350F with convention button.
3. Measure out ingredients.
4. Use scale (make sure to set it to zero).
5. Put all-purpose flour in mixing bowl first.
6. Set to number 2 on the standing mixer and eventually move the number to 3.
7. Wait till it looks like wet sand and stop.
8. After mixing, add salt, baking powder and egg.
9. Liquid measuring cup of 1 oz egg (vanilla comes first before egg).
10. Flour and chocolate chips are added last.
11. Continue to mix until 90% of the flour is mixed in.
12. Get a tray and put 5 to 6 pieces of dough on parchment paper.
13. Check in about 8 to 11 minutes.
14. When the cookie starts to become a nice brown, take them out and enjoy.
