Introduction

Number of Servings: 6

Ingredients

    2 tbsp Butter, salted
    1 tbsp Cooking Wine
    5 serving Hormel Thick Cut Bacon (2 slices)
    3 serving Pamini Hearts of Palm Linguini
    1 cup, chopped Onions, raw
    0.5 cup Sargento Shaved Parmesan Cheese
    1 eggplant, unpeeled (approx 1-1 Eggplant, fresh
    1 cup, fluid (yields 2 cups whip Heavy Whipping Cream
    3 cloves Garlic

Directions

Rinse and soak Palmini in milk for 20 min
Chop bacon and brown on stove
Chop eggplant while bacon cooks
Once bacon is browned, remove the bacon from the pan, but leave the grease
Add garlic, onion, and eggplant to the pan and cook until soft
Once eggplant is soft, make a hole in the center of the pan and add the butter and Palmini, coating the Palmini in the melting butter
Add in wine, parmesan, and heavy cream
Mix Palmini with the eggplant, gradually adding in the bacon

Serving Size: 6 3/4-cup servings
