A spicy and sweet way to use up those vegetables! A spicy and sweet way to use up those vegetables!
Number of Servings: 3


    1 carrot
    1/3 green bell pepper
    1/3 red sweet pepper
    2/3 cup snap peas (about a small handful)
    1 fresh mango
    2 tsp sesame oil
    3 tbs President's Choice Memories of Thailand sauce (or equivalent)


1. Prepare the vegetables first. Slice the peppers lengthwise. Snip the ends off of the snap peas. Peel and chop the mango into inch-sized cubes. Peel the carrot and use the peeler to slice it into long strips.

2. With the sesame oil in a wok (or frying pan), fry the carrots on medium-high heat until they are just turning tender. Add in the mango and continue to fry until it is softened (about five minutes).

3. Add in the remainging vegetables and the thai sauce and fry briefly, about 5 minutes, until the vegetables are all the desired consistency.

4. Remove from heat and serve with rice or noodles.
