Introduction

This is so amazing you will want to eat it as a snack, but serve it for dinner first! Seriously, it makes a terrific snack to take to work, pack in lunchboxes, or just nibble on when the munchies hit! Low fat, low carb and loaded with vitamins and minerals. What more could we ask for? Ingredients

    1 medium bunch fresh broccoli
    1 small head fresh cauliflower
    3 medium carrots
    2 large cloves garlic
    3 tbsp Extra Virgin Olive Oil
    1/4 tsp red pepper flakes (optional)
    Salt & pepper to taste

Tips

I line my pan with parchment paper for easy clean up


Directions

Throughly clean all vegetables. Cut broccoli & cauliflower into bite size pieces and carrots into coins. In plastic bag, add all veggies, olive oil, red pepper flakes, salt & pepper. Using a garlic press, press garlic directly in bag. Massage gently to coat all veggies with oil and seasoning. Spread out on baking sheet in single layer. Bake @ 375 degrees F for 20 minutes.
