    1 cup Dried mung beans
    2 tsp Coconut Oil
    1 medium Onions, chopped
    2 clove Garlic
    2 tbsp Curry powder
    1 400g can chopped tomatoes in tomato juice
    2 tbsp Tomato Paste
    1Kallo Organic Very Low Salt Vegetable Stock Cube plus 1 cup water


Serve with long grain brown or basmati rice or chipatis.
It also goes well with the addition of green vegetables or a salad.


1. Prepare the beans before hand by soaking in cold water overnight then rinse them before use and set aside until required.
2. Fry the onions and garlic in the oil until soft, add the beans, tomatoes, 2/3 a can of water and the curry powder then simmer for about 20 minutes or until tender the beans and the sauce is reduced. Add more water if it gets too dry.
