Ingredients

    1 Cup thawed frozen corn
    1 Ripe mango, peeled, seeded, diced in .5 inch chunks
    2 Inch chunk cucumber unpeeled and diced
    2 Plum tomatoes (or 6 Grape tomatoes) diced
    .25 Cup diced red bell pepper
    .25 Cup Diced red onion
    Juice and zest of 1 lemon
    1 Tablespoon olive oil
    1 Tablespoon rice vinegar
    .25 Teaspoon garlic powder
    .25 Teaspoon crushed red pepper
    .25 Teaspoon table salt
    .25 Teaspoon fresh ground black pepper
    .25 Cup chopped cilantro

Directions

Chop and prepare all ingredients. Just throw them together in a bowl and serve. Serving size is 2 Tablespoons.
