Ingredients

    Pork
    Bell Peppers
    Cheese
    Tequila
    Rice

Directions

Boil water so you can make rice (I like Uncle Ben's seasoned wild rice).
Season pork with salt/pepper and whatever other seasonings you're used to using.
Heat a tablespoon of olive oil in a pan. Add the pork. Add about half a cup of tequila and heat pork for 4 minutes on each side. If more liquid is needed, add more tequila (or your favorite stock).
Add the peppers and place the cheese on top of the pork. Heat until the cheese begins to melt. Don't let the peppers get soft.
Plate your rice and then add the pork/pepper mixture on top.
A very tasty dinner treat, especially with a fresh salad.
