Ingredients

    1 medium onion diced
    2 stalks celery diced
    2 carrots diced
    4-5 clove Garlic minced
    4 oz mushrooms
    1 C Savoy cabbage.
    1 can Stewed Tomatoes, Canned, No salt
    1 can Del Monte Diced Tomatoes, No Salt Added
    2 C Low Sodium Vegetable Broth
    1 cup (8 fl oz) Water, tap
    1 can Kidney Bean Red, drained and rinsed no salt
    1 can white beans, drained and rinsed no salt
    1 cup green beans frozen
    2 tbsp red wine vinegar
    1 1/2 tsp Oregano, ground
    1 tsp Basil
    .5 tsp Thyme, ground
    .5 tsp Pepper, black
    Several handfuls Spinach, fresh

Tips

Add or adjust seasonings to taste.


Directions

Chop all vegetables to uniform size.
Over medium heat, add enough broth to cover bottom of the pot.
Sautť onion, carrot and celery until softened.
Add garlic and stir for one minute.
Add mushrooms and cabbage and cook until softened.
Add tomatoes and stir.
Add both and water and stir.
Add beans and stir.
Add seasonings and stir.
Cover and bring to a boil.
Just as it comes to a boil, turn heat to low and simmer 1 hour.
Add spinach right before serving.
