    2.5 lb boneless beef rump roast, cubed
    16 oz Enchilada Sauce, divided
    2 tsp Beef Base or 2 beef bouillon cubes
    1/2 cup Water, tap
    2 cups Shredded Cheese
    10 burrito-size flour tortillas


Next time I make this, I am going to add corn and green chilies to the beef in the burrito for a more interesting flavor combo.


Add cubed beef, 1 cup of enchilada sauce, bouillon, and water to the Instant Pot. Select "Pressure Cook" or "Manual" and set 30 minutes of cooking time. When beep sounds, turn off pressure cooker by selecting "Cancel" and use a 10-minute Natural Release.

Put the tortillas on a rimmed baking tray lined with aluminum foil. Add approximately 1/2 cup beef to the center of the tortilla, fold in the edges, and roll into a burrito. Repeat with the remaining tortillas.

Top with remaining enchilada sauce and shredded cheese. Broil in oven until cheese is bubbling (about 2-4 minutes).
