Ingredients

    2 serving Pacific Natural Foods Organic Low Sodium Chicken Broth, 1 cup
    24 oz chicken breast, skinless, uncooked (by CLAYMACT)
    2 serving Poblano Pepper, Raw (1 Pepper) (by NEVERNAKED)
    2 serving Anaheim Pepper, 1 Raw Pepper (by ARNIE77)
    2.5 serving Jalepeno (1 Raw) (by LORIWHITCOMB)
    3.3 tbsp. fresh cilantro
    3 medium (4-1/8" long) Scallions, raw
    1 large Onions, raw
    1 small Onions, raw
    10 clove Garlic
    2 cup Cannelini Beans (by EWGJ12)
    2 tsp cumin
    1.5 ish tsp coriander

    salt and pepper to taste

    next time add in diced jalepeno ribs and seeds (of one pepper) with jalepeno at end

to make spicy, add the jalepeno ribs and seeds


Directions

pulse poblano and Anaheim peppers and onion in blender till the thickness of chunky salsa
brown chicken in pot and remove
add garlic, spices, 1 diced jalepeno, and pepper mix, cook till soft (10 mins)
remove 2/3 c veggie mis, add to 2/3 c broth and 2/3 c beans and puree in blender
add puree to mix in pot along with chicken and cook till chicken is done.
remove chicken, shred, add back to pot along with the rest of the beans, cook till thick (10 mins?)
finish with cilantro, second diced pepper, and scallions

Serving Size: makes 8 cups- 6 servings
