Introduction

Delicious, fluffy chocolate mousse. This recipe does NOT have raw eggs! Food safety!

Ingredients

    3/4 c Chocolate Chips, semi-sweet
    1.25 c Milk, 2%
    1/3 cup Granulated Sugar
    1 pouch Gelatin Powder
    1 c Whipping Cream 35%
    1/2 tsp Vanilla Extract

Tips

Amazing with a little lightly sweetened whipped cream on top and a few toasted sliced almonds. Not a diet food. ;)
This recipe can be doubled or even tripled.


Directions

Melt chocolate chips over med-low heat, stirring frequently.
Add milk, sugar and gelatin and stir well with whisk.
Heat to boil over med or med-high heat, mixing almost constantly.
DO NOT LEAVE UNATTENDED.
Once it reaches a rolling boil, remove from heat and cool slightly, then refrigerate.
Stir often, about every 20 minutes, with whisk. When it's starting to thicken, usually in 1-2 hours, prepare whipped cream by beating it with vanilla till stiff.
Fold chocolate mixture and whipped cream together. Gently whisk if needed and return to fridge in desired serving bowl. Mousse will firm up more over the next hour or so.
