Number of Servings: 4

Ingredients

    3 serving Plum Tomato, Fresh, Raw, Large (5oz) (by DIANERA)
    1 serving Basil Pesto (2 tbsp)
    2 tbsp (C) Vinegar, Red Wine (Gr Value)
    1 cup Artichoke Heart Quarters (by SCRUNCHIE99)
    2 cup Baby Spinach (raw)




Tips

Sherry can be used in place of red vinegar.
1/2 cup of cheese croutons can be added if desired.


Directions

1. Whisk pesto and vinegar in a salad bowl until well blended
2. Add tomatoes and artichokes and toss until evenly coated.
3. Place spinach on a serving platter and top with tomato mixture. Serve.
