Ingredients

    4 Egg whites
    2.0 cup Green Tomatoes finely diced
    2.0 cup Splenda No Calorie Sweetener
    1.5 cup chopped walnuts
    0.5 cup Canola Oil
    0.5 cup Applesauce, unsweetened
    1.0 tbsp Vanilla Extract
    2.0 cup Flour, white
    1.0 cup Whole Wheat Flour
    1.0 tbsp Cinnamon, ground
    1.0 tsp Baking Soda
    0.25 tsp Baking Powder

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans. Mix tomatoes, sugar, walnuts, oil, apple sauce, eggs, and vanilla extract together in a large bowl until well blended. Mix flour, cinnamon, baking soda, and baking powder together in a separate bowl; stir into egg mixture until just blended. Spoon batter into prepared loaf pans. Bake in the preheated oven until a toothpick inserted in the middle of each loaf comes out clean, about 1 hour. Let cool in the pans for about 10 minutes before transferring loaves to wire racks to cool completely.
