Introduction

Lamb was on sale so I just decided to fry them up in my cast iron pan with butter, rosemary and garlic the way they do on Masterchef, which I watch religiously. Ingredients

1.5 lb Lamb, Australian, shoulder, blade, trimmed
    1 tbsp Butter, salted
    1 Rosemary sprig
    3 cloves Garlic, chopped
    1 tsp Sea Salt

Tips

The length of time the lamb is cooked on each side is dependent on how thick the piece of meat is. I'm using very thin shoulder chops so I probably won't cook them that long.

Directions

1. Melt butter in pan.

2. Add the rosemary and garlic.

3. After about a minute, add the lamb.

4. Baste the lamb with the butter and sear on each side of the lamb for about 1 minute per side, depending on thickness.
