Introduction

Ingredients

    1 serving Granny smith apple - 1 med. apple
    1.5 serving Apple, Gala (medium)
    2 cup (not packed) Raisins
    1.5 cup (8 fl oz) Water, tap
    3 tbsp Peanut Oil
    1 cup Honey
    2 tbsp Honey
    1.5 tsp Cinnamon, ground
    1.5 tsp Allspice
    1.5 tsp Salt
    0.5 tsp Cloves, ground
    3 cup Whole Wheat Flour
    1.5 tsp Baking Soda

Directions

Preheat oven to 350 degrees F/180 degrees C. Lightly grease two 9” × 5” (23 cm × 13 cm) loaf pans.
Place apples and raisins in a bowl and cover with boiling water. Pour oil on top and allow to soak for 10 minutes. Add honey, cinnamon, allspice, salt, and cloves and allow to cool. In another bowl, sift together flour and baking soda. Combine with fruit mixture. Pour into loaf pans and bake for approximately one hour (until a toothpick inserted in the center of each loaf comes out clean).

*Grate the apples on the big holes of a box grater (anything smaller and you’ll end up with a huge mess). The recipe takes about 2˝ medium-sized apples, and I like to use one tart apple, like a Granny Smith, and the rest sweeter but still firm apples (Fuji or Gala work well, and then you can just eat the remaining half apple).

Serving Size: Makes 24 1/2" (1.5 cm) slices (two loaves sliced into twelve slices each)
