Ingredients

2 sweet potato, 5" long Sweet potato (sliced into circles)
5 serving Johnsonville Original Breakfast Sausage Links (3 sausages per serving) chopped
3 tsp Organic Valley Ghee Butter
2 small Onions, raw chopped
12 large Egg, fresh, whole, raw
.3 cup Aroy-D Coconut Milk, full fat, canned (by ANTIOCHIA)
1 tsp Garlic powder
1 tsp Salt
black pepper to taste
Directions
1. preheat oven to 425 and grease a 9x13 casserole dish
2. Toss sweet potatoes with melted ghee and a pinch of salt. Roast in casserole dish for 30 minutes
3. Saute onions
4. whisk together eggs, coconut milk, salt, pepper, and garlic powder
5. Lower oven to 400
6. layer onions over sweet potatoes. Layer sausage over onions. pour egg mixture and cover evenly
7. Bake at 400 for 25 minutes
